Latest Read Part 2: Breakfast Toast Recipe

Our go-to breakfast every morning is either a smoothie, because it’s fast and portable, or oatmeal and fruit.  But, I have been seeing a lot of recipes in other blogs and magazines lately of breakfast toasts.  So, when I was reading this book, I stumbled upon her version.  I fixed it one morning for us, and everyone agreed it was a keeper!  Hayley asks for it probably twice a week.  Since making it for only three of us, I have adjusted it more and more to our liking.

Angela uses her 9-spice mix sprinkled on top, and it does add that bit of something extra. But, the first time I made the toast, I was short on time and only used salt and pepper on top.  It was still delicious.  So, if you are in a hurry, skip the spice mix.

I like to use this bread.  It has a nice, nutty crunch to it.

Toast your choice of bread.  You can use gluten-free bread, too.

Rub each toasted slice with a peeled clove of garlic.

I like more hummus on mine that Angela uses.  So, for my recipe for three slices, I spread 1/4 cup of my hummus evenly among the three slices.  You could use store-bought hummus, too.

I then top each piece of toast with four slices of avocado.

Angela uses a little more olive oil than I do.  I evenly drizzle 1 teaspoon of olive oil over all three pieces.  ( I’m laughing as I type this… I am noticing the teaspoon.  I think it landed in the food disposal a few too many times. :))

I then squeeze just a little fresh lemon juice over each piece.

Here’s where you just top with salt and pepper.  But, if you want a little extra zest…..see below.

Mix all of these spices together.  Store in a jar for up to two months.

Sprinkle as much of this as you would like over toast.  If you are one of those people that likes more heat, sprinkle red pepper flakes, too.

Recipe:

Breakfast Toast

three slices of bread

1 peeled garlic clove

1/4 cup hummus

1 avocado

1 teaspoon olive oil

1 lemon

salt and pepper

9-spice mix (optional), see below

red pepper flakes (optional)

9-Spice Mix:

1 teaspoon sweet paprika

1 teaspoon garlic powder

1 teaspoon dried minced onion

3/4 teaspoon fine sea salt

1/2 teaspoon freshly ground pepper

1/2 teaspoon dried oregano

1/4 teaspoon ground turmeric

1/4 teaspoon dried thyme

1/4 teaspoon smoked paprika

Mix all ingredients and store in an airtight container for up to two months.

I hope you try this toast.  It really is tasty!!
