Rourke and I have smoothies for breakfast most mornings. I try to switch the ingredients up every now and then to keep things interesting!
Here is a smoothie that will take you to a Caribbean island in the dead of winter. It has no added sugar and is full of nutritional value!
It has five dates for sweetness, an orange, a banana, 3 cups of fresh pineapple chunks, and 1 tsp. fresh ginger.It also has 1/2 cup of light coconut milk and 1/2 cup of non-fat Greek yogurt.In a blender, pour in the coconut milk first.Add the peeled orange.The yogurt.The dates and ginger.The pineapple and banana.
Turn on your blender slowly and gradually speed up until smooth. If it is not sweet enough for you, you could add honey or light agave.Garnish with pineapple chunk, orange wedge and a cherry.
(makes 2 smoothies)
1/2 cup of light coconut milk
1 peeled orange
3 cups of fresh pineapple chunks, approximately 1 pineapple
1 tsp. fresh ginger
1/2 cup non-fat Greek yogurt
Put ingredients in a blender and blend until smooth.
(You can make ahead and pour in glasses. Cover with Saran Wrap and store in fridge for several days.)Enjoy a taste of the tropics without getting on a plane!
