Do you ever have a function at work or church where you are asked to bring a dish? Well, here is a new one to try and bring. It’s a healthier twist on mac-n-cheese but with so much flavor!
Start with a spaghetti squash. Cut in half and scoop out seeds and veins. Turn upside down on a baking sheet and bake at 400 degrees until squishy to the touch, around 30 minutes.Meanwhile mince 1 clove of garlic. (I love using this “car” my friend gave me to mince garlic). And, roughly chop 5 ounces of fresh baby spinach.
In a large cast iron skillet, melt 5 tablespoons of butter on medium. (I use grass-fed butter only. Reasons here.) Add garlic and cook for a minute. Sprinkle in 5 tablespoons of flour, whisking after each tablespoon. Add 2 cups of half-n-half, whisking constantly. (I make my own half-n-half by mixing half whipping cream and half skim milk, making it less fattening.)
Add 6 tablespoons of light sour cream.
Add chopped spinach and stir until cooked on low. Add salt and pepper and 1/2 teaspoon of nutmeg.
Take cooked spaghetti squash and scoop out “noodles” into to skillet. Mix well. Add 2 cups mozzarella and 1 cup freshly grated Parmesan. Stir well. Add salt and pepper as needed.
This is a great make-ahead dish. Just let it get to room temperature and bake for about 2o minutes at 250 degrees.
1 spaghetti squash
5 tablespoons butter
5 tablespoons flour
1 clove of garlic, minced
5 ounces of spinach, roughly chopped
2 cups of half-n-half
6 tablespoons of light sour cream
1/2 teaspoon nutmeg
2 cups of grated mozzarella
1 cup freshly-grated Parmesan
salt and pepper to taste
Preheat oven to 400. Cut squash in half. Scoop out seeds and veins. Place both sides flesh-side down and bake for about 30 minutes or until “squishy.”
In a large skillet, melt 5 tablespoons of butter over medium. Saute’ garlic for a minute. Sprinkle in the flour one tablespoon at a time, whisking after each one. Add half-n-half, and whisk until smooth. Add sour cream and stir. Add spinach, salt, pepper and nutmeg. Stir well. Scoop spaghetti “noodles” into the skillet. Mix well. Add cheeses and mix well. Salt and pepper as needed.
Pour into a casserole dish to serve.
