Feta is one of my favorite cheeses! I thought I would share some delicious summer salads using this salty-soft cheese of choice. Here is my first one!!
A watermelon, basil, and feta salad!! This would be great to bring to a Memorial Day get-together!!You will need a small, seedless watermelon, 1 shallot, 1 cup of basil, and 4 ounces of feta cheese.
Cut your watermelon into bite-sized pieces and add to a bowl.Slice shallot and take rings of shallot out of each other and add to the bowl.Mince basil and add to the bowl.Crumble feta into bowl and add salt and pepper.
In another bowl, whisk together 1/2 cup of olive oil, 1/4 balsamic vinegar (I’m using a blackberry-infused one) 1 tablespoon of light agave syrup, salt and pepper. Right before serving, pour this over salad and mix gently.
(Serves 4-6 depending on serving size)

1 shallot, sliced
1 cup fresh basil, minced
4 ounce feta cheese
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tablespoon light agave syrup
salt and pepper to taste
Add watermelon, basil, shallot rings, feta and salt and pepper to a bowl. In a separate bowl, whisk together olive oil, vinegar, agave syrup and salt and pepper together.
Drizzle dressing over watermelon mixture just before serving and mix gently.Bon appetite!
