Feta Fetish: Summer Salad One

Feta is one of my favorite cheeses!  I thought I would share some delicious summer salads using this salty-soft cheese of choice.  Here is my first one!!

A watermelon, basil, and feta salad!!  This would be great to bring to a Memorial Day get-together!!IMG_6816.JPGYou will need a small, seedless watermelon, 1 shallot, 1 cup of basil, and 4 ounces of feta cheese.

IMG_6819.JPGIMG_6820.JPGIMG_6823.JPGCut your watermelon into bite-sized pieces and add to a bowl.IMG_6824.JPGSlice shallot and take rings of shallot out of each other and add to the bowl.IMG_6825.JPGIMG_6826.JPGMince basil and add to the bowl.IMG_6827.JPGIMG_6828.JPGCrumble feta into bowl and add salt and pepper.

IMG_6831.JPGIn another bowl, whisk together 1/2 cup of olive oil, 1/4 balsamic vinegar (I’m using a blackberry-infused one) 1 tablespoon of light agave syrup, salt and pepper.  Right before serving, pour this over salad and mix gently.  IMG_6832.JPG

Recipe:

(Serves 4-6 depending on serving size)

1 small, seedless watermelon, cut into bite-sized pieces

1 shallot, sliced

1 cup fresh basil, minced

4 ounce feta cheese

1/2 cup olive oil

1/4 cup balsamic vinegar

1 tablespoon light agave syrup

salt and pepper to taste

Add watermelon, basil, shallot rings, feta and salt and pepper to a bowl.  In a separate bowl, whisk together olive oil, vinegar, agave syrup and salt and pepper together.

Drizzle dressing over watermelon mixture just before serving and mix gently.IMG_6833.JPGBon appetite!
