Are you looking for a festive cocktail to imbibe on while you fry that Thanksgiving turkey? Or, to enjoy with your Thanksgiving guests while you are finalizing the Thanksgiving lunch details?
Well, have I got one for you? Try this “Pumpkin Pie Mimosa” for you and your friends and family!!
All you need is granulated sugar, honey, canned pumpkin, pumpkin pie spice, a pinch of salt….
….and a few more spices!
In a saucepan, dissolve 3/4 cup sugar, 1/4 cup honey and 1 cup of water. When dissolved, turn off heat and add 1/4 cup pumpkin, a pinch of salt, 1 teaspoon pumpkin pie spice, 1/4 tsp. ground cinnamon, 1/4 tsp. ground ginger, 1/4 tsp. ground allspice, and 1/4 tsp. ground cloves. Mix well and let cool.
To serve, fill glasses with pumpkin pie mixture about 1/3 full.
Top off with champagne.
For garnish, cut wedges out of a mini pumpkin. Cut a small slit in the wedge and place on rim of glass.
Enjoy!
Recipe:
(makes approx. 8-10 drinks)
1 bottle of champagne
1/4 cup canned pumpkin
1/4 cup honey
3/4 cup granulated sugar
1 cup of water
1 tsp. pumpkin pie spice
1/4 tsp. ground ginger
1/4 tsp. ground allspice
1/4 tsp. ground cloves
1/4 tsp. ground cinnamon
a pinch of salt
1 mini pumpkin for garnish
In a saucepan, dissolve water, sugar and honey. Turn heat off and add pumpkin, salt and spices. Mix well and let cool.
Pour pumpkin pie mixture into champagne glass about a third of the way. Top with champagne.
Garnish with a mini pumpkin wedge.
