Skillet Shrimp Scampi (Zoodle-style)



Looking for a low-carb, healthy meal ready in approximately 15 minutes, give or take?  I have for you shrimp scampi in the skillet with zucchini noodles.  At about 200 calories per serving, WOW, I’m on this “Zoodle Train!” Toot-toot!

fullsizeoutput_4358.jpegFirst, you need a spiralizer if you do not currently have one.  They come from pricey to low-end.  If you don’t want to spend big bucks, I recommend starting out with a low-end option to see how much you will use it.  And, then down the line, you can invest in a more expensive, solid metal one, like a before, if you feel is deemed worth.

I love this one that attaches to my KitchenAid stand mixer. It comes with several spiral shape options.

fullsizeoutput_435b.jpegStart by spiralizing 4 zucchini into a bowl.IMG_5968.JPGfullsizeoutput_435c.jpegChop garlic, parsley and slice lemon.  Have wine, salt, pepper, pepper flakes and Parmesan on hand.IMG_6001.JPGIMG_5998.JPGPeel and devein shrimp.

IMG_5999.JPGThis happens fast!  Heat skillet over medium-high heat and add olive oil.  Add “zoodles” and cook for about 5 minutes, stirring occasionally.

Add garlic and cook 1-2 minutes more, stirring.

Add shrimp and cook 1-2 minutes.

Add wine and cook two more minutes.

Add seasonings, squeeze of the lemon, and grated Parmesan (if desired.)IMG_6007.JPGServe immediately!


( makes 2 servings)

15-20 minutes from start to finish


3 cloves of garlic, finely minced

12 large shrimp

1 lemon

1 tablespoon chopped, fresh parsley

1/2 cup white wine

1 tablespoon olive oil

4 zucchini, spiralized

salt and pepper to taste

grated Parmesan, optional

1/4 tsp. red pepper flakes, optional


Heat a skillet on medium high and add olive oil.  Add zucchini and cook for 5 minutes, stirring occasionally.  Add the garlic and cook 1 minute, stirring.  Add shrimp and cook 1-2 minutes more, stirring.  Add wine and let everything cook 2 more minutes.  Garnish with parsley and a squeeze of lemon juice.  Salt and pepper to taste. Add garnishes and stir once more.  Serve immediately.
