Kale and Apple Slaw with Honey-Yogurt Dressing

How about a healthy yet delicious Christmas salad to take to your next holiday party or get-together?

This one has a lot of color, crunch and creaminess. It has sweet and savory flavors to boot!

I love that you can also make it ahead of time!  Wow!  Win-win!

It does not keep that long, so it does need to be served and eaten pretty quickly, but I doubt that will be an issue.  😉

Here is what I did:

fullsizeoutput_46a7.jpegI covered and place in the fridge.fullsizeoutput_46a8.jpegNext, I sliced around the core of 2 apples, 1 red and 1 green.fullsizeoutput_46a9.jpegI sliced each one into very thin slices, about 1/8 inch thick.fullsizeoutput_46aa.jpegI then tossed them with lemon juice to keep them from browning.fullsizeoutput_46ac.jpegfullsizeoutput_46ab.jpegI then layered in the raisins and pecans, topping everything with the kale.fullsizeoutput_46af.jpegI tossed the dressing into everything and seasoned with salt and pepper.fullsizeoutput_46b7.jpegfullsizeoutput_46b8.jpegfullsizeoutput_46b9.jpeg

Recipe:

(4-6 servings)

Total time:  approximately 15 minutes

Ingredients:

Dressing:

8 tablespoons non-fat Greek yogurt

2 tablespoons mayonnaise

2 tablespoons honey

1 clove of garlic grated

2 teaspoons Dijon mustard

salt and pepper to taste

Salad:

1/8 cup golden raisins, rehydrated

1/2 cup toasted, chopped pecans

2 apples, thinly sliced

5 ounces baby kale

Juice of half a lemon

salt and pepper to taste

Directions:

Combine dressing ingredients.  Refrigerate until ready to serve salad.

Combine salad ingredients.  When ready to serve toss with dressing.  Season with salt and pepper.

(To make ahead, layer apples, then pecans and raisins, and then kale on top.  Cover and refrigerate.)

Serve immediately.
